Algae Cooking Club Shiitake Mushroom Oil

Created by Algae Cooking Club in collaboration with Chef Daniel Humm, this is the same umami-rich oil used in the kitchen at Eleven Madison Park. While not everyone can dine there, this chef-driven ingredient brings that depth and precision within reach at home.

Dried shiitake, red miso, black garlic, wakame, and kombu are steeped low and slow in high oleic algae oil, allowing each element to express itself with clarity and balance. A touch of urfa chili adds gentle warmth, rounding out the earthy richness.

Deeply savoury and layered, it’s an effortless way to build complexity. Fold it into rice, season broths, enrich a bolognese, or drizzle over grilled vegetables just before serving. It adds remarkable depth to ramen, pasta, sautéed greens, and even simple eggs. Use it as a finishing oil, or cook with it gently over low heat.

Made with high oleic algae oil — a clean, neutral cooking oil rich in Omega-9s and low in saturated fat — it provides a pure base that lets the umami ingredients shine.
