Leaf gelatine has a cleaner flavour and clearer set than powdered gelatine, and is the form preferred by pastry cooks and professional kitchens. Gold leaf grade is the standard for most applications. Each sheet sets approximately 100ml of liquid. Soak in cold water before use, then squeeze out excess before adding to your preparation.
