Belazu Preserved Lemons
Belazu's preserved lemons are small thin-skinned lemons preserved in brine and lemon juice. Used widely in Middle Eastern, North African, and South Asian cooking, where they add a depth of flavour that fresh lemon and salt alone can't replicate.
You can use every part: the peel is the most commonly called for, but the flesh and brine are both worth keeping. The brine in particular is an underused ingredient. It's already seasoned and carries that same fermented citrus character, so add it to dressings, marinades, or anywhere you want a salty, tangy edge. If using the flesh, rinse it first as it absorbs the most salt.
