Ottolenghi Miso Pesto
This is pesto with a twist. Instead of basil, Ottolenghi’s version is built on spinach, with caramelised onions, pine nuts, and white miso bringing a deeper, more savoury character. Where a classic basil pesto is bright and herbaceous, this one is rich, mellow, and full of umami.
Toss it through pasta, spoon it over roasted vegetables, or spread it onto sandwiches and grain bowls. It’s especially good anywhere you want that comforting pesto richness, with an added layer of savoury depth.
Like much of Ottolenghi’s work, it reflects a way of cooking that leans into bold, balanced flavours—this time with a quietly unexpected edge.
