Thai Green Curry Mussels – Bold Flavour in Under 30 Minutes

Mussels are one of the easiest, most rewarding proteins to cook. They take just minutes to steam open, turning into a restaurant-quality meal with almost no effort. When paired with the bold, aromatic flavours of Thai green curry, they become something truly special—a dish that feels indulgent but comes together in less time than it takes to order takeout.

The secret to incredible Thai green curry mussels is in the ingredients. Mae Ploy Thai Green Curry Paste delivers an authentic balance of heat and freshness, packed with green chilies, galangal, and kaffir lime. A splash of Red Boat Fish Sauce rounds everything out with rich, briny depth, giving the broth its signature umami flavour. Coconut milk softens the spice and adds just the right amount of creaminess.

Thai Green Curry Mussels

Ingredients:

1 Tbsp coconut oil
2 shallots, finely chopped
1 Tbsp chopped garlic
5 tsp Mae Ploy Thai Green Curry Paste
1 x 400 mL can coconut milk
1/2 cup homemade or sodium-free chicken or vegetable stock
1 Tbsp Red Boat Fish Sauce
2 tsp brown sugar
1 chopped Thai chili (optional)
2-3 lbs fresh mussels*
1/4 cup cilantro leaves, coarsely chopped
Lime wedges
Crusty bread or jasmine rice for serving

*1 lb of mussels per person is perfect for a light meal.

Instructions:

  1. Heat coconut oil in a large pot over medium heat. Add shallots and garlic and sauté for 1-2 minutes or until softened. Add curry paste and sauté for 2 minutes longer.
  2. Add coconut milk, chicken stock, fish sauce, brown sugar, and Thai chili (if using - it will already be moderately spicy from the curry paste). Turn heat to medium-high and bring to a boil. Simmer for 2-4 minutes or until the broth is fragrant.
  3. Add mussels, cover the pot, and let cook, stirring every minute or so, for 2-4 minutes or until all the mussels are opened and just cooked through.
  4. Squeeze in a little lime juice, sprinkle with cilantro and serve immediately with crusty bread or jasmine rice.
